We would like to share with you a case study of one of our French customers. This producer of natural ingredients required a solution for processing and preparation of acacia gum.
The acacia gum works as an emulsifying agent, stabilizer, adhesive, flavour fixative and inhibitor of sugar crystallization. Acacia is the dried & gummy substance which excreted from the stems and branches of Acacia Senegal also popularly known as babul in India.
It is mainly used the production of beverages, gelatines and puddings, frozen dairy desserts, snack foods, breakfast cereals, imitation dairy products and fats and oils.
It is also a source of soluble fibre and known for containing soluble fibre of 80%. While formulating foods or beverages with fibre, Gum Acacia is an excellent, cost effective option because it has minimal impact on food and beverage flavour or texture.
